1/2 cup bacon crumbles
6 tablespoons butter
4 small shallots (or 2 small onions), minced
4 pounds fresh Brussels Sprouts, halved
1/2 teaspoon cayenne pepper
1 1/2 cups heavy cream
1 cup shredded sharp white cheddar
1 cup shredded Gruyere

Directions:

1. In a large skillet over medium heat, melt butter. Add shallots and Brussels Sprouts and season with cayenne. Cook stirring occasionally until tender, about 10 minutes.
2. Remove from heat and drizzle with heavy cream, then top with both cheeses and bacon.
3. Put in 13X10X2.5 half steam table pan.
4. Cover and refrigerate.
5. On holiday, put pan in oven at 250º until hot.
6. Put casserole in crock pots on warm to keep warm while serving.

You may need to cook Brussels Sprouts in two batches to keep them from burning while getting them tender.
