2 eggs
⅔ cups granulated sugar
tsp lemon extract
1 package (8 oz) flaked coconut or shredded coconut (about 2 cups coconut)

Directions:
Directions:
In a mixing bowl, beat eggs lightly with a fork. Add sugar, lemon extract and coconut and stir to mix. Drop mixture using a heaping teaspoon onto a well-greased baking sheet. Bake at 350 F for 12 minutes until lightly browned. remove and cool on a wire rack.
