1 dozen beaten eggs
1 c of meat (diced ham, bacon crumbles or browned sausage crumbles)
¼ c chopped onion
1 small can mushrooms (or use fresh mushrooms)
Salt & Pepper to taste

Cheese Sauce
2 Tbsp butter
2 Tbsp flour
2 c milk
1 c shredded cheese.

Directions:
Scramble eggs until just moist. Add rest of ingredients and mix. Pour into casserole dish. Pour Cheese Sauce over egg mix.

Cheese Sauce: Melt butter, gradually add flour to make roux; gradually add milk. Stir while heating. Add cheddar chees , stirring until melted. Pour cheese sauce over egg mix. Refrigerate over night.

Bake at 350º until bubbly.
