FILLING:

1/3 c. Light corn syrup
1/2 c. softened butter
'3 c. powdered sugar
1 1/2 tsp. peppermint extract


COATING:
2 c. dark chocolate chips

Directions:
Mix all filling ingredients together till a soft dough forms. If using a stand mixer, about 2-3 minutes. You can easily use a fork to mix as well.

Work dough in hand until smooth and easy to work with. Roll out until about 1/4-inch thick. Use round cookie cutter of desired size. Place on a cookie sheet lined with wax paper or parchment paper. Once all dough has been used, place cookie sheet in freezer for 10-15 minutes.

Melt dark chocolate per package instructions Melting may be done in microwave oven or using a double-boiler method.

Dip the filling circles in melted chocolate and then refrigerate till firm.
