4 Eggs, separated
2 cups Cream-Style Canned Corn
½ Teaspoon Salt
10 Tablespoons Melted Butter
1 Cup Cracker Crumbs
1 Teaspoon Baking Powder
½ Cup Vegetable Oil

Directions:
Directions:
Beat egg whites until stiff. Beat yolks until foamy, and add corn, salt, and two tablespoons of the butter. Mix cracker crumbs and baking powder, and combine with corn mixture. Gently fold in egg whites. Mix vegetable oil and remaining eight tablespoons of melted butter, and heat in skillet. When hot, drop spoonfuls of batter and fry until brown on both sides. Makes six servings.
