1 1/2 cups cornmeal
1 1/2 cups buttermilk
2 1/4 cups flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp soda
1/2 tsp salt 3 eggs
3/4 cup melted butter
jelly or jam of choice

Directions:
Directions:

Mix cornmeal and buttermilk together and set aside 10 minutes. Mix flour, sugar, baking powder, baking soda and salt together in a bowl. Beat 3 eggs and then beat in 3/4 cup melted butter and the cornmeal and buttermilk. Then stir in dry ingredients till just mixed. Don't over mix or will be tough. Take a spoon a put a Tlb of jam into top of each muffin. Bake at 400º for 20 to 25 minutes.
