Bean and Veggie Burritos Recipe

1 tsp vegetable oil
2 medium onions, chopped
3 cloves garlic
1 green pepper, chopped
1 c diced zucchini
1 grated carrot
2 tsp chili powder (or more)
1 tsp oregano
1 tsp cumin
1 and 1/2 c salsa
1 can refried beans
5 tortillas
2/3 c shredded cheddar

Heat oil over medium heat. Cook onions. Add garlic and green pepper, zucchini and carrot.
Stir, cook for 5 minutes.
Stir in chili powder, oregano and cumin.
Stir 2/3s of the salsa into the beans. Spread on the tortillas. Leave a 1 in border.
Cover with veggie mix. Roll and place seam side down in a baking pan - lightly oiled.
Bake at 400 degrees for 15 minutes. Sprinkle with cheese and bake 5 more minutes.
Serve with salsa and plain yoghurt.
