1 tsp sugar
1 cup warm water
2 tbsp yeast
2 cups milk
1 cup butter
½ cup sugar
1 cup cold water
2 eggs
11 cups flour (approx)
2 tsp baking powder
2tsp baking soda
2 tsp salt

Directions:
Directions:
Dissolve 2 tsp sugar in 1 cup warm water. Stir in 2 tbsp yeast. Let stand 10 minutes, (Use a 2 cup measuring cup as yeast will rise)
Meanwhile, heat the milk in the microwave approx 2-3 minutes,until scalded. Cut up the butter into small squares and add to the hot milk. Stir until mostly melted. Add sugar, then cold water to cool mixture.

At this point, put the liquid mixture into a mixer and add the eggs. Beat well, slowly blend the 6 cups of flour until dough is smooth. Let rest 20 minutes.

Change to dough hook or knead by hand. Add baking powder, baking soda and salt, then gradually add 5 cups flour. Knead until smooth dough is formed.

Oil hands, removefrom mixer and put in large bowl. Cover with tea towel and let rise approx 1 hour. Punch down and form buns. Put on greased pan. Cover and let rise approx 1 hour. Bake at 375ºF for 20 minutes. Makes approx 4 dozen buns depending on size.
