Greek Chicken Recipe

Ingredients: Chicken (breasts or thighs) Potatoes (sweet or white) cut in half and then in fourths (or even smaller) Vegetable oil salt, pepper,and oregano 3-4 pads butter Juice of ½ lemon

Directions:Preheat oven to 350º
Remove skin from chicken, rinse and pat dry.
Place chicken and potatoes in a baking dish and drizzle olive oil over all (Uncle Jim says not to be stingy with the oil) and use your hands to make sure all chicken and potatoes are covered.
Season chicken and potatoes with salt, pepper and oregano on both side.
Put a quarter pad of butter on each piece of chicken.
Bake for 30 minutes, then remove from oven and squeeze lemon juice into one corner of the pan along with a heavy sprinkle of garlic powder.
(This step is very important) Swirl the pan around to mix the lemon and garlic with pan juices. Spoon some of the juice on the chicken. Return to oven and bake another 30 minutes. |
