2 1/2 cups whole-wheat flour
1/2 cup vegetable oil
1 tsp salt
1 cup hot water

Directions:

1. In the bowl of an electric mixer, pour in the flour, oil and salt. Beat with paddle until crumbly, about 3-5 min.
2. Mix in the hot water and continue mixing until the dough is smooth, about 3 min.
3. Take the dough out and divide into 12 equal sized pieces. Shape into discs with the palm of your hand and lay out on a clean surface to rest. Cover with plastic wrap and allow to rest for 15 min to 1 hour.
4. Heat a skillet over medium-high heat. It should be fairly hot before you begin cooking.
5. Press the tortillas in a tortilla press or roll out with a rolling pin, using flour very lightly as necessary.
6. Cook the tortillas one at a time until puffy and slightly brown, about 30-60 seconds per side.
