18-20 white mushrooms, stems removed
10 ounces goat cheese
1 package of hot Italian sausage
1/4 cup panko breadcrumbs, plus extra for sprinkling
1 tablespoon minced fresh garlic

Directions:
Directions:
Preheat oven to 400.
Wipe mushrooms off with a damp paper towel and place on prepared baking dish, caps down.
In a large pan cook sausage and drain the grease. While the pan is still hot, mix the cheese, breadcrumbs, parsley, and garlic with the sausage until thoroughly combined. Dollop mixture into mushroom caps. Sprinkle tops with extra breadcrumbs.
Bake in preheated oven for 15-18 minutes, until mushrooms are tender and breadcrumbs are turning golden.
Serve warm from oven.

One tip - I add a few tablespoons of water to the baking dish to help steam the mushrooms while they cook.
