Sweet and Sour Pork Recipe

2 tsp oil
1 and 1/4 lbs pork tenderloin cut into cubes or strips
2 tsp grated gingerroot
1 tsp minced garlic
1 and 1/2 c green pepper
1 and 1/2 c sliced carrots
1 c chopped onions
1 can of pineapple chunks
1/4 c ketchup
1/4 c rice vinegar
3 T brown sugar
2 T soy sauce
1 T corn starch
1/2 tsp chili powder
4 c hot cooked rice or quinoa

Directions:
Directions:
Heat oil in a large wok or skillet over medium high heat.
Add pork, gingerroot and garlic.
Cook and stir fry for 6-7 minutes, until pork is cooked through.
Remove pork from wok and keep warm. Add green pepper, carrots, and onions to the wok. Cook and stir for about 5 minutes or until veggies are tender.

Prepare sauce. Drain pineapple, reserving 1/2 c of the juice. Combine juice, ketchup, vinegar, brown sugar, soy sauce, corn starch and chili powder. Add sauce to veggies in the wok., along with pork, and pineapple.
Cook until sauce is bubbly and has thickened.
Serve over hot rice or quinoa.
