Batter:
1/2 c. margarine
1/2 c. sugar
2 eggs
3/4 c. milk
1 1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt

Filling:
1 # ricotta cheese
2 Tbs. melted margarine
1 egg
1 tsp. sugar
1 tsp. cinnamon

Directions:
Directions:
Batter: cream together margarine and sugar. Add other ingredients and mix thoroughly.
Filling: Mix together all ingredients.

In greased 8x8 pan layer 1/2 batter, all filling, and 1/2 batter. Bake at 350º for 1 hour. Let sit for 10 mins. before serving.

Can be made in advance - refrigerate, then bake before serving.

Serve with sour cream and preserves.
