4 cups mild cheddar cheese, freshly shredded
1 clove garlic (optional)
1 ¼ cups dry or medium apple cider
Little butter
3 tablespoons cornstarch
Pinch each: cayenne, salt, and nutmeg

Directions:
Directions:
Rub garlic clove on the inside of a medium-size saucepan. Reserve 2 tablespoons of the cider. Heat the cider over medium heat until barely simmering. Add the cheese, a handful at a time, stirring until the cheese is melted before adding more. Make a paste with the reserved cider and the cornstarch. Stir into cheese mixture. Stir in cayenne, salt, and nutmeg. Stir until almost boiling.
