Directions:
Directions:
Peel tomatoes and dice them. Set aside.
Sweat 1 and 1/2 large onions (low heat) until transparent.
Add chopped garlic
Cook on low for 2-3 minutes.
Add tomatoes.
Cook on medium heat for about 1/2 an hour. Stirring occasionally.
Simmer on low heat about 1 hour.
After the first 1/2 hour add parsley, basil, salt and pepper.

Freezes well.
The best advice Alita gave was to freeze whole tomatoes in season (cut the stem out first), with peeled garlic, in ziplock bags. Makes fresh sauce year round.
Run the tomatoes under hot water to pop the skins off.
Let them thaw until you can cut them up. Then proceed with the rest.
This is excellent over zoodled zucchini - even Jim eats it.
Zoodle the zucchini, drop it in boiling water and remove it immediately. Top with sauce.
