12 jalapeno peppers, cut lengthwise and de seeded
½ cup sharp cheddar cheese, grated
½ cup cream cheese, softened
12 slices of bacon, halved

Line a cookie sheet or baking sheet with aluminum foil. Remove the seeds from the peppers using latex gloves (the seeds will burn your skin). Wash the peppers to make sure all seeds and membrane are removed. In a bowl, combine the cream cheese and sharp cheddar cheese. Fill the peppers with a teaspoon of cream cheese mixture, enough to fill it up. Wrap the pepper with the bacon all the way around the pepper. Place wrapped pepper, seam side down on baking sheet. Bake in 400º oven for about 30 minutes. For extra crispy peppers, turn oven to broil for last few minutes.
