1 lb hot Italian sausage.
8 c beef broth
1 can diced tomatoes
1 can tomato sauce
1 c onions, chopped
1 c carrots, chopped
1 tsp basil
1 tsp oregano
2 c frozen tortellini
2 c sliced zucchini
1/2 c sliced dill pickles (Just do it.)
1 green pepper, chopped
1/4 c fresh parsley, chopped (or dried)

Directions:
Directions:
Make little balls out of the sausage and brown it.
Drain the fat.
Add everything up to and including the oregano.
Bring to a boil.
Simmer, covered, for 45 minutes.
Add the rest.
Bring back to a boil.
Cover simmer until tortellini floats.

I usually add way more vegetables. Broccoli is good. More carrots etc. The dill pickles are awesome.
I always make a huge batch and freeze it.
This recipe came from Nan Mosely and Rose Balcom when we used to volunteer for the 'Out of the Cold' program in Midland...many moons ago.
