1 c whole milk (or soy or almond milk)
1/2 c apple juice concentrate
2 T butter (or coconut oil)
1 egg
2 egg whites
1 c whole wheat flour
2 1/2 tsp baking powder
1/2 c powdered milk (I might omit this now...)
1/2 c oatmeal
1/2 c wheat germ
2 1/2 tsp vanilla
1 tsp cinnamon
1/2 c chopped apricots
1/2 c chopped walnuts

Directions:

Mix dry ingredients. Mix wet ingredients. Add the two together.
Make pancakes.

I used to make double and triple batches of this. Initially, when the kids were small, I made tiny pancakes. The pancakes grew as the kids did. I haven't made them in a long time because I forgot about them...but the kids ate them cold off the counter as snacks and packed them in lunches. It's one of the ways I made sure Duncan and Molly were eating good food too. This is a flashback for sure. They smell so good when you cook them. Haha! Just texted Matilda to see if she remembers... so fun. This is a keeper.
