3 lbs chicken breasts
1/3 c butter, melted (or coconut oil)
1/3 c liquid honey
1/4 cup dijon mustard
4 tsp curry powder
pinch of cayenne pepper

Directions:
Directions:
Arrange the chicken in a single layer, in a casserole dish. I prefer skinless, but if you have skin on, put the skin side down.
Mix the other stuff in a measuring cup until smooth and blended.
Pour over the chicken. You could cover it and put it in the fridge here, for later.
Bake chicken, uncovered at 375 degrees for 20 minutes, baste once in the middle. Turn it. Cook another 20 minutes or until chicken is tender. We love this. The coconut oil gives it a slightly different taste but we like it too...maybe better.

This recipe is from the old blue Canadian Living Cookbook and it is one of the ones that Aunt Page the Great put a star beside and we still love it. I think that she would approve that I add a scrap of Thai chili here too.
