4 cups chicken stock
2 tbsp butter
1 2/3 cups primo Italian style arborio rice
1/3 cup parmesan
1 beaten egg yolk
1/4 lb mozzarella cheese cut into 24 1/2" cubes.
2 eggs beaten
1 1/2 cups bread crumbs

Directions:
In sauce pan (1) bring stock to simmer.
In sauce pan (2) melt butter med heat
add rice stir to coat, gradually add stock, stiring constantly
Stir in parmesean
Let cool
Stir in beaten egg yolk.
Make 24 balls, push cheese cube into centre
Coat in bread crumbs
In a deep pan heat several inches of oil at med-high heat
cook at 45 seconds per side
