Lemon Cheese Pressed Cookie Recipe

Christine Brown Yott (Recipe of Sally Gerhold Brown)


1 c. butter (softened)
3 oz. cream cheese (softened)
1 c. sugar
1 beaten egg
1 T. lemon juice
1 tsp. lemon rind(zest)
2 c. flour
1 tsp. baking powder

Preheat oven to 375

Blend butter and cream cheese.
Add sugar.
In separate bowl, blend egg, lemon juice and lemon rind/zest. Once blended, add to butter, cream cheese, and sugar mixture.
Blend flour and baking powder and the add to the mixture.

Chill x 3 hours.

Place in cookie press onto ungreased cookie sheet.
Bake 8-10 minutes, until browned.
