3 eggs
1 c. shortening
1 c. brown sugar
1 c. white granular sugar
2 c. grated zucchini
2 tsp. vanilla extract
3 c. flour
1 tsp. baking soda
tsp. baking powder
1 tsp. salt
3 tsp. cinnamon

Preheat oven to 325

Beat together the eggs, shortening, sugars, zucchini and vanilla.
Mix the dry ingredients; flour, baking soda, baking powder, salt, and cinnamon.
Add dry ingredients to the other ingredients and mix until blended.

Bake 60 minutes or until inserted toothpick comes out clean.
