2 cloves garlic
1/3 whole grain spicy mustard
1/4 cup white vinegar
1/4 cup extra virgin olive oil
1/2 tsp salt
2 scallions, green and white parts, minced

In a blender, combine the garlic, mustard, vinegar, oil, salt and scallions and blend until smooth. The dressing can be stored in an airtight container in the refrigerator for up to 1 1/2 weeks.
