cup oil (coconut)
cup dark molasses
1 cup applessauce or mashed bananas

1 cups oatmeal flour
tsp. soda
1 tsp. baking powder
tsp. cinnamon or fresh ginger
pinch of cloves
tsp. salt
cup raisins, frozen raspberries, bananas
or cranberries
of seeds (pumpkin, sunflower, sesame or nuts)

- Preheat the over to 378 F.
- Grease a 12 cup muffin tin.
- Mix oil, molasses and apple sauce. Sift together the flour, soda, baking powder, cinnamon, cloves and salt. Stir together wet and dry ingredients and raisins. Drop into muffin cups and bake 25-30 minutes. Check with a toothpick.

This recipe is modified from Mom's, Laurel's Kitchen Cookbook. It is great for school lunches, hiking trips and long trips in the car. In the years when I babysat Tammy's four and my two it was an after school staple!
