½ lemon, peeled and seeded
½ c. olive oil
2 large garlic cloves, minced
3 T. fresh basil (1 T. dried)
2 c. bread crumbs
⅔ c. freshly grated Parmesan cheese
⅛ tsp. pepper
2 lbs. fish fillets

Preheat oven to 350º
In a blender, puree the lemon and olive oil.
Pour the lemon mixture into a heated skillet and sizzle for a minute.
Then add the garlic and basil, sauteing until an aroma arises from the pan.
Mix in the bread crumbs, stirring often, until they are dry.
Remove the mixture to a bowl and stir in the Parmesan cheese and black pepper.
Place the fish in an oiled baking dish and spoon on the topping.
Cover and bake 20 min. or until fish is flaky.
