Sweet and Sour Brisket Recipe

3 1/2 lb. Beef Brisket, fat cap trimmed to 1/4" thick (Kosher Salt and Pepper)
1 Tbsp. Safflower Oil
2 Onions, thinly sliced (4 Cups)
2 C. Chicken Broth
1 C. Chili Sauce (such as Heinz)
1/2 C. Packed Dark Brown Sugar
1/2 C. White Vinegar

Directions:
Preheat oven to 300 degrees.

In a heavy dutch oven add oil. Place on stove over med/high heat and sear both sides of brisket- about 4 minutes per side.

Remove Brisket from pan. Add about 1TBSP. of additional oil. Add onions, 1tsp of salt and 1/2 tsp. of fresh pepper, stirring until onions are translucent, about 5 minutes. Add Broth, chili sauce, brown sugar and vinegar; bring to a boil.

Place brisket and any juices back to the pot with the sauce and cover. Place in 300 degree oven for 3 hours or until meat is tender.

Transfer brisket to a cutting board. Let stand 10 minutes, then slice and place back in sauce.

Great served with mashed potatoes, on a sandwich or with pasta.
