2 lbs. fish fillets
¼ c. lemon juice
3 T. olive oil
1 c. chopped onions
1 large clove garlic, minced
1 T. chili powder
¼ tsp. ground cloves
¼ tsp. cumin
¼ tsp. ground coriander
3 c. diced, canned tomatoes
1 T. honey
1 c. pitted black olives, chopped
salt and pepper to taste
chopped parsley

Directions:

Preheat oven to 350º
Arrange the fish in an oiled baking dish.
Salt it lightly and sprinkle witha few tsp. of lemon juice. Chill.
In a medium skillet, saute onions, garlic, chili powder, cloves, cumin and coriander in oil until onion is translucent.
Add the tomatoes, honey, olives and remaining lemon juice and simmer 15-20 min.
Pour the sauce over the fish, top it with parsley and bake 20-30 min. until fish is flaky.
