1 large onion, diced
2 garlic cloves, minced
2 tsp vegetable oil
1 lb chopped beef
1 (28-oz) can tomatoes with juices
1 can red kidney beans, rinsed and drained
1 jalapéno pepper chopped fine
1 cup chopped green peppers
1 cup chopped celery
1 cup chopped carrots
1 ˝ Tbsp brown sugar
1 ˝ Tbsp chili powder
1 tsp cumin
1 tsp oregano
1 tsp salt
˝ tsp coriander
⅛ tsp cloves
⅛ tsp allspice
1 cup sour cream (optional)
1 cup chopped onion or scallions (optional)
1 cup shredded Cheddar cheese (optional)

Directions:
Directions:
1. Brown chopped beef in oil in large skillet.
2. Add all other ingredients, squeezing whole tomatoes, and simmer, covered, on low heat for 1 hour or until vegetables are soft and almost incorporated into meat. Most of the liquid will have evaporated. If mixture gets too dry, add water 1 Tbsp at a time.
3. Serve with sour cream, onions, and cheese to be added as desired.
3. Can be served with tortilla chips or as a main course.
