1 can bean dip (9 oz)
cup sour cream
1 Tbsp southwestern seasoning mix
2 cups cooked ground beef
1 medium red bell pepper (chopped)
cup thinly sliced green onion about 8 stalks)
cup chopped cilantro
5 (10 inch) flour tortillas
8 oz shredded cheddar cheese
2 medium plum tomatoes
Salsa (optional)

Directions:

Preheat oven to 375

Combine bean dip, 2 Tbsp sour cream and 1 Tbsp seasoning mix. In a separate bowl, combine beef, bell pepper, green onion and 2 Tbsp cilantro.

Layer tortillas with bean mixture and one cup of meat mixture. Repeat three times

Bake 25-30 minutes. Mix remaining sour cream and seasoning mix. Spread evenly over warm tortillas. Top with tomato, cheese and salsa. Slice and serve.
