1 (2 oz.) pkg yeast dissolved in 4 Tbsp warm water
1 c milk, scalded
3 T shortening
1 tsp salt
4 Tbsp sugar
1 egg white, slightly beaten
About 4 c flour

Directions:
Oven 350º
Disolve yeast cake in warm water. Melt shortening in scalded milk. Mix first six ingredients and add enough flour to make doubh stiff enough to handle. Knead on floured board until smooth. Place in buttered bowl, cover with towel and let double in bulk. Roll out on slightly floured board. Cut with round cutter. Brush with melted shortening, fold over Parker House-style and place on baking sheets. After dough has risen (about 45 minutes), bake in 350º oven for about 15 minutes. Makes about 28-30 rolls.
