2 c sugar
1 ½ c butter
4 eggs
2 c flour
2 tsp baking powder
1 tsp soda
1 tsp salt
1 tbsp cinnamon
2 c grated carrots
2 c crushed pineapple
½ c chopped nuts

Frosting: 8 oz. softened cream cheese
3/4 stick of butter
1 tsp vanilla, 1 lb. powdered sugar
½ c pecan halves

Directions:

Oven 325º
Use parchment paper to line the pans. Grease three (9") round pans; do not flour
Mix sugar and butter in large mixing bowl. Add remaining ingredients in order listed. Drain excess juice from carrots and pineapples before putting in bowl. Stir all ingredients together. Divide among three pans. Bake 40-50 minutes at 325º. Let cake cool before frosting.

Cream Cheese Frosting
Mix cream cheese, butter, vanilla. Gradually add powdered sugar. Mix well.
After cake cools, frost tops and sides of layers with frosting. Decorate with pecans.
