2 cups flour
2 cups white sugar
2 t. baking soda
3 t. cinnamon
1 t. salt
3 cups finely chopped carrots
1 1/2 cups Wesson Oil
4 eggs

Icing
8 oz. cream cheese
1 lb. confectioners sugar
1 1/2 chops chopped pecans
1 stick butter
1 t. vanilla

Directions:

Sift dry ingredients 3 times. In separate bowl beat together carrots and oil. Add eggs one at a time. Gradually stir in sifted dry ingredients, mixing well. Pour into lightly greased cake pans and bake until done. Test with toothpick.

She used a hand crank (optional discs) for carrots. You don't want any juice.

She used a hand mixer for the icing.

Make cake several days ahead and store in refrigerator, this is what makes it moist. She did this with all her cakes.
