Ingredients:  
1 T. vegetable oil
1 lb. ground Italian sausage
1/2 cup diced onion (about 1/2 of a medium onion)
1T. minced garlic
1- 28 oz can crushed tomatoes
1 - 32 oz can vegetable or chicken broth
2 T. fresh, chopped basil
1 t. salt
1/2 t. pepper
1 - 9 oz. package of refrigerated tortellini
2 cups packed, fresh spinach

Directions:
Directions:
Heat a large heavy bottomed pan over mdium/high heat. Heat vegetable oil, add diced onions, sauteing onions until soft. Crumble italian sausage and garlic into the onion, cook until sausage is no longer pink. Stir in crushed tomatoes, broth, basil, salt and pepper. Bring to a boil. Reduce heat to low and cover. Let simmer 20-30 minutes. Add tortelli and spinach and simmer for about 10 minutes or until pasta is tender.Serve with shredded parmesan cheese.
