1 cup cooked, mashed carrots
¾ cup white sugar
1 cup margarine
1 egg, well beaten
2 cups flour
2 ½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
juice and grated rind of 1 orange
(reserve 1 TBS. orange juice for icing)
icing sugar
milk

Directions:
Directions:
Mix ingredients in order. The dough may seem thin, but do not put more flour in. Drop by spoonfuls onto cookie sheets. Bake at 350º F. for 8 ­ 10 minutes.
Frost warm cookies with 1 TBSP. orange juice, a little milk and icing sugar to make a glaze.
