2 cups flour
2 cups sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 eggs
1 cup canola oil
3 cups grated carrots
1 tsp. vanilla
1 cup raisins or chopped walnuts

Icing

1 ­ 8 ounce cream cheese
½ cup butter
1 tsp vanilla
3 ½ cups icing sugar

Directions:

Mix dry ingredients. In a bowl, mix eggs, oil, carrots, vanilla and raisins or nuts. 
Add dry ingredients and stir until mixed.
Pour into 2 ­ 8X8 inch greased pans or a 10X14 inch greased pan. Bake at 350º F. for 35 minutes or until done when tested with a toothpick.
Cool cake before icing. Beat softened cream cheese, butter and vanilla together. When it is well mixed add icing sugar and beat well. Spread on cake. Freezes well.
