Frozen Key Lime Pie Recipe

1 graham cracker crust
6 extra large egg yolks
⅓ cup granulated sugar
1 (14 oz.) can sweetened condensed milk
2 Tbsp. lime zest
cup freshly squeezed lime juice (8-9 small limes)
Cream, whipped (slightly sweetened with sugar and vanilla)

Make graham cracker crust according to directions.
Combine yolks with of the lime juice in a small pan.
Cook over medium heat, stirring constantly.
Once the mixture reaches 140, remove from heat and immediately put in mixing bowl with sugar.
*At 140 it should look like pudding.
Beat egg yolks and sugar in mixing bowl until slightly thickened--4-5 minutes.
Add remaining lime juice, lime zest, and sweetened condensed milk and mix well.
Scoop into pie crust and smooth.
Garnish with whipped cream.
Freeze for 24 hours before serving. Remove from freezer 10 minutes before slicing and serving.

I love this traditional icebox key lime pie! Originally it was made without cooking the eggs, but for safety reasons I prefer to do it! I've tried many recipes that try to get around the eggs with a lot of different ingredients, but I don't think anything is as good as the original.
