Ingredients: 8 oz semisweet chocolate ¾ cup heavy whipping cream 2 tablespoons unsalted butter 2 tablespoons Irish cream, Kahlua, Brandy, or whatever ⅓ cup unsweetened cocoa

Directions:Process chocolate in a food processor until the size of a small pellet. Warm cream in a small saucepan until very hot (but do not let it come to a simmer or boil). Pour the cream over the chocolate and process 5 to 10 seconds. Scrape down the sides and process 5 seconds more. Add butter and liqueur. Process until well combined. Add cocoa and blend until completely incorporated and smooth. Scrape down the sides and blend again until smooth. Cover a baking sheet with waxed paper and drop spoonfuls of the mixture. Refrigerate until firm, at least 1 hour. Roll into smooth balls. Either leave plain, dip in melted chocolate, nuts, or coconut. |
