1 tbsp extra virgin olive oil
1/4 red onion, finely chopped (1/4 cup)
4 ears corn, kernels (3 cups, or 3 cans)
1/4 tsp kosher salt
Dash of black pepper
4 boiled new potatoes, cubed
2 tbsp half and half

Directions:
Directions:
1. Heat a large skillet over medium heat and add oil.
2. When oil is hot add onion, corn, salt and pepper; cook 5 minutes.
3. Add boiled potatoes and half and half and mash with fork. Cook until warmed through.
