1 (1 pound) pork tenderloins
1/2 tsp kosher salt
1/2 tsp black pepper
1 tbsp extra virgin olive oil
2 celery stalks, finely chopped (1 cup)
1/4 red onion, finely chopped (1/4 cup)
2 cups fresh cherries, pitted and cut in half
1 cup gluten free low sodium chicken or vegetable broth

1. Preheat oven to 375ºF
2. Place tenderloin in a 9 x 13 baking dish. Season all sides of pork with salt and black pepper. Place in oven and cook for 30 minutes.
3. Meanwhile, heat olive oil in a small stock pot. Add celery and onion, cooking until softened, about 4 minutes. Add cherries, stirring to combine. Add broth and simmer 5 minutes until reduced.
4. Remove pork from oven. Pour cherry sauce over tenderloin. Return to oven for 20-25 minutes or until internal temperature reaches 145ºF.
5. Remove from oven and cover with foil. Let rest for 5 minutes before serving.
