2 medium tomatoes
1/4 red onion, finely chopped (1/4 cup)
1/2 tsp kosher salt
1/2 tsp extra virgin olive oil
1/2-1 lime

Directions:
Directions:
Remove core from tomatoes, dice, and place in mason jar. Mix in onions, olive oil and salt. Squeeze in lime juice. Combine all ingredients until well mixed.

Cover and refrigerate for up to two days.
