Annual Recipes 2008


1 pound lean ground beef
1/2 cup chopped onion
1/2 cup diced bell pepper
1 can corn, drained
1 (4.4-ounce) package precooked brown rice
1 cup salsa
1/2 tsp black pepper
4 cups shredded iceberg lettuce
1 ounce reduced fat shredded cheddar cheese
1/4 cup reduced-fat sour cream

1. Cook first 3 ingredients in a large skillet over medium-high heat until browned, stirring to crumble beef. Drain if necessary. Stir in corn and next 3 ingredients. Cook 2 minutes or until thoroughly heated, stirring frequently.
2. Divide lettuce evenly among plates. Top with beef mixture, cheese, and sour cream.

Yield: 4 servings (1 cup lettuce, 1 cup beef mixture, 1 tbsp. cheese, and 1 tbsp. sour cream)
