Cranberry Salad Recipe

1 lb. cranberries (sack)
1 lb. miniature marshmallows
1 med. can crushed pineapple (drained and save c. Juice)
1 c. sugar
1 c. whipped cream ( 2 cartons)
1 envelope Knox gelatin

Directions:
Directions:
Grind cranberries and marshmallow together in a food processor. Add pineapple and sugar. Mix well. Boil Knox gelatin with the pineapple juice just until gelatin is dissolved. Add this to the cranberry mixture and let it cool.

Chill mixing bowl and beaters in refrigerator. Put the whipping cream in the bowl and beat until the cream holds up.

You can substitute cool whip but it will make it sweeter.

This recipe was given to me by a good friend, Rita, that lived just down the road when Staci was about 2.
We spent many evenings together as the men worked shift work. Her little girl, Amy, and Staci played together.
