Brine (8 cups water,⅓ cup salt,,1 tsp.MSG)
6 to 10 cups vegetable oil
BREADING
9 oz. all purpose flour
1Tbsp. plus 1 tsp. Salt
1 Tbsp MSG
2 tsp. Sugar
2 tsp. Ground pepper (I use tellicherry pepper optional)
½ tsp. Ground white pepper
½ tsp. Paprika
½ tsp.ground savory
½ tsp. Ground sage
¼ tsp. Ground ginger
¼ tsp. Ground marjoram
¼ tsp. Onion powder
⅛ tsp. Garlic powder
⅛ tsp. Ground cayenne pepperDissolve

Dissolve ⅓ cup salt and 1 Tbsp.MSG in 8 cups water.Add chicken and marinate for 2 hours.Remove chicken rinse with water and blot dry.Heat oil in deep fryer to 300 degrees.Make breading by combining all ingredients in large bowl.In separate bowl beat 4 eggs add 2 cups of milk.When oil is hot,Dip each piece of chicken in the egg and milk mixture and then press into the breading..Toss each piece in breading till well coated.(you can repeat process for extra crispy),shake off excess breading and fry 2 to 4 pieces at a time(or whatever fryer can hold)for 15 minutes or until chicken is golden brown. Drain chicken on rack for at least 5 minutes.Hold chicken in warm oven until all is cooked.

I found this recipe through trial and error.Yes it has a number of spices that make up a great combination.So don’t let it scare you.It also makes great chicken fried steak.
