Cake

2½ C flour
1½ C sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1½ C vegetable oil
2 large eggs
1 C buttermilk. room temperature
2 T red food coloring
1 tsp vinegar
1 tsp vanilla

Frosting

16 oz cream cheese softened
4 C sifted powdered sugar
2 sticks unsalted butter; softened
1 tsp vanilla

Directions:
In large bowl sift together dry ingredients. In another large bowl whisk together wet ingredients. Mix dry ingredients into the wet just until combined and a smooth batter is formed. Divide evenly into cake pans. Place in oven evenly apart. Bake rotating pans halfway through. Cake should pull slightly away sides of pans. 20 to 30 minutes or until toothpick comes out clean. Cool completely.

Frosting

Mix first three ingredients together for about five minutes or until fluffy. Add vanilla and beat again. Put in refrigerator until somewhat stiff.

To frost cake; Place rounded side down to frost. Frosting should be ¼" to ½" thick between layers.
