2 1/4 C all-purpose flour
2 tsp ginger
2 tsp cinnamon
1 tsp baking soda
1/2 tsp cloves
1/2 tsp salt

1 stick unsalted butter at room temperature
1 C sugar, plus more for rolling
1/3 C molasses
1 large egg

Preheat oven to 375
Line two baking sheets with parchment paper.

whisk flour and the dry ingredients together, set aside.

Beat butter and suger together. (use mixer on medium)
Add molasses and egg and beat until lighter in color.

Add the flour mixture and mix (on low) until well blended.

You can chill in refrigerator while cleaning up abit to make dough easier to roll.

Using a teaspoon, form into 1 inch balls and roll in sugar. Place 2" apart on baking sheets.

Bake until golden brown and crackled...about 12-15 minutes.

Best to bake 3 batches, one at a time, for the nice crackly top.

Allow to cool five minutes before removing from baking sheet.

Best eaten warm with a glass of cold milk. Yummy!
