8 medium sweet potatoes or yams (or half raw sweet potatoes and half canned sweet potatoes in syrup)
1/2 c. hot milk
2 tbsp. butter
1 tsp. paprika
1/2 tsp. salt
1 tsp. cinnamon
1 c. chopped walnuts
Small can crushed pineapple
Bag of large marshmallows

Preheat oven to 350ºF.

Peel and cube sweet potatoes. Cook in boiling water until easily pierced with a long handled fork NOT MUSHY! Drain thoroughly. (If using half raw/half canned, add the canned sweet potatoes to the raw at this point.) Mash the sweet potatoes with the hot milk, salt, paprika, cinnamon, and butter. Stir in chopped walnuts and crushed pineapple. Pour into a greased/buttered baking dish. Bake for approximately 30 minutes.

Remove from oven and cover the top with large marshmallows. Put back in the oven long enough for the marshmallows to turn puff up and turn a golden brown. WATCH CAREFULLY as marshmallows can burn and/or melt if not taken out soon enough!
