Cauliflower - Frozen works best - Several bags depending on how much you need to make
1/2 cup flour
1 stick butter
Salt and white pepper to taste
Milk - pour and stir - how much you add is dependent on how much sauce you want. Probably a cup or more
Grated Cheddar Cheese - divided - add as much as you want, probably a cup or cup or two

Steam cauliflower - I buy the bags you can cook in the microwave

Melt butter and add flour and salt and white pepper, cook for a minute or so, constantly stirring. Add some milk and continue stirring, Add cheese, keep stirring, taste to determine if you need more milk and cheese.

Put steamed cauliflower in an oven safe casserole dish, sprayed with PAM. Pour the cheese sauce over the cauliflower. Top with cheddar cheese.

Heat in the over at 350º for about 20 minutes. This heats well the next day too.
