8 large potatoes - 4 to 5 pounds
8 ounces cream cheese
1 cup sour cream
4 tbsp. butter
2 tsp. salt
½ tsp. pepper

Directions:
Directions:
Heat oven to 400º F
Peel potatoes
Cut potatoes into squares - approximately 1" in diameter
Bring 1 pot of water to boil and place potatoes in water
Boil potatoes for 10 minutes, or until they are cooked 100% through
Strain Potatoes
Pour potatoes into mixing bowl and mash well
Add cream cheese and sour cream
Mash well
Mix in salt and pepper
Set mixture asside
Butter 9" x 13" Pan with butter
Add mixture into pan and cover with foil
Cook in oven at 400º F for 50 to 60 minutes
After 35 minutes, remove foil and place pan back in the oven to produce a golden brown color
