5 Bacon Slices
2 cups chopped yellow Onion (1 Lg.)
½ Cup chopped Celery (about 3 stalks)
½ Cup chopped Green Bell Pepper
1 Cup uncooked long grain Rice
1 (16 oz.) Can chopped Whole Tomatoes
¾ Cup Chicken Broth
½ tsp. Kosher Salt
½ Black Pepper
½ tsp. Cayenne Pepper
¼ tsp. Hot Pepper Sauce

Directions:
Directions:
Preheat oven to 350º. Serves 6.
In skilet cook bacon until crisp. Remove bacon. Reserving drippings in skillet. Crumble Bacon for garnish.
Add onion, celery & bell pepper to drippings in skillet. Cook until veggies are tender. About 5-6 minutes.
Stir in rice, tomatoes, broth, salt, black pepper, cayenne pepper, & hot pepper sauce. Spoon into a lightly greased 2 qt. baking dish. Cover & bake uabout 40-50 minutes or until rice is tender. Top with bacon.
