¼ C flour
1 lb beef liver
¼ to ½ C butter
½ tsp salt
⅛ tsp pepper
oil
1 onion thinly sliced
½ C beef stock
¼ C Marsala wine

Directions:
Directions:
1. In bag mix together flour, salt, and pepper.
2. Slice liver into " strips and put in bag to coat a few at a time. Shake to coat.

3. In fry pan 6 T melt the butter with a dash of oil and saute onions. When done place in a dish and sprinkle with salt and
pepper.

4. In same skillet melt 8 T butter and a dash of oil; over high heat stir in the liver and cook five minutes. Stirring
constantly. Add onions; heat through and move to serving plate.

5. Deglaze pan with stock and wine and keep the heat until you get a thick sauce.

Pour glaze over liver.
